From a young age began his fascination with the culinary arts, nutrition, psychology, and the balance there of.

Adam Burress started under some of Louisville's greatest chefs and establishments. Burress helped to open Jeff Ruby's and then went on to work as Sous Chef under Anthony Lamas of Seviche where he honed in his skills and confidence enough to open his first restaurant at age 24 with Chase Mucerino. Hammerheads was an overnight success and can be credited as a forerunner in the wave of high-end gastropubs that swept the culinary scene around 2010. HAMMERHEADS quickly became a local treasure Using unique game meats and flavors that were not yet present on the midwest restaurant palate.

Adam soon expanded his culinary portfolio with GAME, a unique burger bar showcasing exotic meats such as wild boar, ostrich, alpaca, and wagyu to name a few. Then came MIGO, a popular spot in the highlands neighborhood with a more latin lean featuring one of the city's strongest taco programs and other mouthwatering bites such as lima bean guacamole, a rotation of alluring mussel broths and the famous yucca tots! But, the most recent and elevated edition to Adam’s culinary repertoire is the new city favorite, OSTRA.

OSTRA features a high-end and more experimental culinary slate with a focus on flavors that follow the equator from the strong Polynesian style seafood program that features superb oysters, poke, and ceviche to the South American inspired flavors featuring smoked chanterelle risotto, bang bang chicken, and lobster Capellini.

Chef Adam's wide range and understanding of not just the culinary arts of flavor and presentation, but the qualitative sourcing of fresh and local ingredients and their nutritional and psychological benefits to the human body make him a genuine ambassador of food and foodkind!
